Crunchy Seasonal Vegetable Salad with Crispy Bacon

Roast up perfectly crisp vegetables with the help of Clover Olive Pride Cooking Spray—an easy, flavourful side for any meal!

Ingredients:

  • Clover Olive pride Non-Stick Spray
  • 2 Tbsp lemon juice
  • 2 Tbsp Dijon mustard 
  • 1 fennel bulb (peeled and shredded)
  • 6 Tbsp mayonnaise
  • 2-3 celery sticks (peeled and sliced)
  • 1 bunch radishes (thinly sliced)
  • Bell peppers (thinly sliced)
  • Half cabbage (finely shredded)
  • 250g streaky smoked bacon
  • 1 Tbsp like oil
  • Salt & pepper
  • Chives to garnish

How To Make Vegetable Salad

  1. Preheat your oven to 200°C. 
  2. Line a large baking sheet with parchment paper and spray with Clover Olive Pride Non-Stick Spray. In a large bowl add the fennel. 
  3. Pour over the lemon juice and allow to stand while preparing the vegetables and bacon. In a medium bowl, combine the celery, peppers, cabbage, and radishes. 
  4. Drizzle with olive oil, season with salt and pepper, and toss to coat evenly. Spread the vegetable mixture evenly onto the prepared baking sheet and roast for 20 – 25 minutes. 
  5. In a small bowl combine the mayonnaise and the mustard then pour over into the fennel and lemon juice. Add the vegetables and toss. Check the seasoning. Top with crispy bacon and garnish with chives.
