Ingredients:

For the dough:

  • 2.5 kg white bread flour
  • 1 x instant yeast
  • 1/2 teaspoon salt
  • 1 tsp spicy steak and chops spice
  • 1 tsp ground cumin
  • 1/4 tsp ground black pepper
  • 1/4 cup olive oil
  • 1 x spice of rice (7g)
  • Dried Italian herbs (to taste)
  • Mixed herbs (to taste)
  • Lukewarm water (enough to form a dough)

For the Chakalaka Mix:

  • 2 x tins chakalaka mild and spicy (400g each)
  • 400g white button mushrooms, sliced
  • 20g French chives, chopped
  • 20g fresh rosemary, chopped
  • Crushed garlic and chilli (to taste)

For the layers:

  • 180g smoked ham, sliced
  • Grated Gouda cheese
  • Grated Cheddar cheese
  • Micro herbs (for garnish)
  • 230g smokey onion and mustard flavoured cream cheese

How To Make
Chakalaka Round Layered Bread with Mushrooms, Cheese, and Ham

Preheat your oven to 190°C (375°F). Grease a round cake pan or a loaf pan.

Prepare the dough:

  1. In a large mixing bowl, combine the flour, yeast, salt, spicy steak and chops spice, ground cumin, black pepper, spice of rice, dried Italian herbs, and mixed herbs.
  2. Gradually add lukewarm water and olive oil to the dry ingredients, stirring until just combined to form a dough.
  3. Knead the dough lightly until it is smooth and elastic. Let it rest for 10 minutes.

Prepare the Chakalaka Mix:

  1. In a separate pan, combine the chakalaka, white button mushrooms, French chives, fresh rosemary, and crushed garlic and chilli.
  2. Cook the mixture over medium heat until the mushrooms are tender, and the flavours are well combined. Set aside to cool slightly.

Assemble the bread:

  1. Divide the dough into small, bite-sized portions.
  2. Layer the dough portions in the prepared pan, starting with a layer of dough, followed by the chakalaka mix, slices of smoked ham, and a sprinkle of both Gouda and Cheddar cheese.
  3. Repeat the layering process until the pan is filled, ending with a layer of dough on top.

Bake:

  1. Place the assembled bread in the preheated oven and bake for 45-50 minutes, or until the bread is golden brown on top and a toothpick inserted into the centre comes out clean.

Cool and serve:

  1. Remove the bread from the oven and allow it to cool in the pan for 10 minutes.
  2. Transfer the bread to a wire rack to cool completely.
  3. Once cooled, slice and serve garnished with micro herbs and a side of smokey onion and mustard cream cheese.

  • Chocolate spread
  • Strawberries
  • Bananas
  • Blueberries
  • Raspberries
  • Powdered sugar
  • Assorted nuts, chopped

How To Make
Chocolate Pizza with Fresh Fruits

Preheat the Oven:
Preheat your oven to (190°C).

Prepare the crust:

  1. Place the pre-made pizza crust or flatbread on a baking sheet.

Bake the crust:

  1. Bake the crust in the preheated oven for about 5-7 minutes, or until it is lightly golden and crispy.

Spread the chocolate:

  1. Remove the crust from the oven and let it cool for a few minutes.
  2. Spread a generous layer of Nutella evenly over the crust while it is still slightly warm.

Add fresh fruits:

  1. Wash and slice your chosen fresh fruits.
  2. Arrange the fruits over the Nutella spread as desired.

Optional toppings:

  1. Sprinkle with powdered sugar for a touch of sweetness.
  2. Add chopped nuts for extra crunch.
  3. Garnish with mint leaves for a fresh finish.

Serve:

  1. Slice the chocolate pizza and serve immediately.
