Individual Peppermint Tarts
We’re putting a quick and easy twist on a favourite Christmas dessert with these delightful individual peppermint tarts. Perfectly portioned and packed with holiday flavour, they’re a must-try for your festive celebrations!
Ingredients:
- 1 packet coconut biscuits, crushed
- 1 tin caramel
- 250ml fresh cream, whipped
- 125g peppermint crisp, chopped
To serve:
- Mint sprigs
- Peppermint crips, crushed
How To Make Individual Peppermint Tarts
- Place caramel in a large bowl, beat until smooth then fold in the whipped cream chopped peppermint crisp. Place a layer of coconut biscuits at the base of 6 individual glasses, then spoon over the caramel mixture, top with another layer of crushed biscuits, then caramel mixture. Place into the fridge for about an hour, then just before serving sprinkle over some crushed peppermint crips and garnish with mint.
Chefs Tip:
- Allow the tarts to chill for at least 2 hours or overnight for a firmer texture.
- For a twist, swap coconut biscuits for ginger snaps or chocolate cookies to add a different flavour profile to your tart.
- Freeze the peppermint crisp for a few minutes before chopping to make it easier to cut into clean, even pieces.
