Milk Tart Cupcakes

Mmm, nothing better!

Ingredients:

 

For the vanilla cupcakes:

  • 2 ½ cups cake flour
  • 2 cups castor sugar
  • 3 tsp baking powder
  • ½ tsp salt
  • 1 cup Clover Mmmilk, vanilla 
  • 1 Tbsp vanilla paste 
  • 2 large eggs 
  • 1 cup water 


For the filling:

  • 2 cups Clover Mmmilk
  • 1 tsp vanilla paste 
  • 3 Tbsp sugar
  • 2 Tbsp cornflour 
  • 3 large egg yolks 


To serve: 

  1. 4 cups ready-made vanilla buttercream 
  2. 2 tsp ground cinnamon

How To Make Milk Tart Cupcakes

  1. Preheat oven to 180°C.  
  2. Line a muffin pan with cupcake liners and set aside. 
  3. In a large mixing bowl add in Clover Mmmilk, vanilla paste and eggs, whisk until well combined, then sift in all in the dry ingredients and whisk until smooth, slowly pour in water in a steady stream and mix further until smooth and lump free, pour the batter into the prepared liners.
  4. Bake for 12 – 15 minutes. 
  5. Meanwhile prepare the milktart filling, In a saucepan over medium heat, add in Clover Mmmilk, vanilla and allow this to heat up, in a separate bowl whisk together egg yolks, sugar, vanilla and corn flour until well combined, then slowly pour some of the heated milk into the egg mixture and whisk continuously, now pour the mixture into the saucepan, keep whisking until the custard thickens for about 3 – 5 minutes. 
  6. Remove from the heat and allow it to cool down completely.
  7. Once the custard has cooled, spoon half of the custard into a piping bag. Use a small knife to cut out a small hole in the center of each cupcake. Pipe custard into each cupcake hole. 
  8. Combine the remaining custard with the buttercream, and spoon into a piping bag fitted with a nozzle of your choice. Pipe the cupcakes with the buttercream and dust over some cinnamon.
