Serves: 4
Preparation time: 15 minutes
Cooking time: 15 – 20 minutes
Ingredients:
- 2 cups cooked chicken, or leftover rotisserie chicken
- 1/4 cup dried cranberries, chopped
- 1/4 cup feta cheese
- 2 tbsp mayonnaise
- 1 tsp Dijon mustard
- 1/2 tsp ground nutmeg
- 1/2 tsp ground cinnamon
salt and pepper, to taste - 1/4 cup fresh parsley, chopped
- 8 slices of bread
- Butter, softened
- 1/4 cup Mrs Balls Sweet Chilli Sauce
How To Make Mrs Balls Chicken & Festive Stuffing Jaffel
- In a large bowl, mix the shredded chicken, chopped cranberries, feta cheese, mayonnaise, Dijon mustard, nutmeg, cinnamon, salt, and pepper. Stir until well combined.
- Fold in fresh parsley if using. Butter one side of each slice of bread. Place two slices, buttered side down, on a clean surface.
- Spread a thin layer of Mrs Balls Sweet Chilli Sauce on the unbuttered side for a festive touch. Spoon the chicken mixture evenly onto the slices with the sauce.
- Top with the remaining slices of bread, buttered side facing out. Preheat your jaffle iron on the stove over medium heat.
- Place the assembled jaffle into the iron, close it firmly, and trim any excess bread if needed. Cook for 2-3 minutes on each side or until golden brown and crispy.
- Remove the jaffles from the iron, let them cool slightly, then cut in half. Serve warm with extra Mrs Balls Sweet Chilli Sauce on the side for dipping.
