Serves: 5-8
Preparation time: 20-30 minutes
Cooking time: 10-15 minutes
Ingredients:
- 425g puff pastry, cut into circles
- 1 egg, beaten
- 1/2 cup cranberry sauce
- 3 tbsp Mrs. Balls Original Chutney
- 120g Brie cheese, cut into small wedges
- 1 tbsp thyme
- Olive oil, for drizzling
- Black pepper, freshly ground
To Serve:
- Rocket (arugula)
- Cherries, pitted and halved
How To Make Tartlets
- Preheat the oven to 200°C and grease a muffin tin. Roll out the puff pastry on a floured surface and cut out circles using a round pastry cutter.
- Place the pastry circles into the muffin tin, pressing down to create a base, and trim any excess. Prick the bases with a fork to prevent puffing and brush the edges with the beaten egg. In a medium bowl, mix the cranberry sauce with Mrs. Balls Original Chutney and spoon the mixture into the pastry shells.
- Add a wedge of Brie cheese to each tartlet, then sprinkle with thyme, drizzle with olive oil, and season with black pepper. Bake for 10-15 minutes, or until the cheese is melted and the pastry is golden and crispy.
- Allow the tartlets to cool slightly before serving warm, garnished with rocket and halved cherries.
