Serves: 5-8

Preparation time: 20-30 minutes

Cooking time: 10-15 minutes

Ingredients:

  • 425g puff pastry, cut into circles
  • 1 egg, beaten
  • 1/2 cup cranberry sauce
  • 3 tbsp Mrs. Balls Original Chutney
  • 120g Brie cheese, cut into small wedges
  • 1 tbsp thyme
  • Olive oil, for drizzling
  • Black pepper, freshly ground

To Serve:

  • Rocket (arugula)
  • Cherries, pitted and halved

How To Make Tartlets

  1. Preheat the oven to 200°C and grease a muffin tin. Roll out the puff pastry on a floured surface and cut out circles using a round pastry cutter.
  2. Place the pastry circles into the muffin tin, pressing down to create a base, and trim any excess. Prick the bases with a fork to prevent puffing and brush the edges with the beaten egg. In a medium bowl, mix the cranberry sauce with Mrs. Balls Original Chutney and spoon the mixture into the pastry shells.
  3. Add a wedge of Brie cheese to each tartlet, then sprinkle with thyme, drizzle with olive oil, and season with black pepper. Bake for 10-15 minutes, or until the cheese is melted and the pastry is golden and crispy.
  4. Allow the tartlets to cool slightly before serving warm, garnished with rocket and halved cherries.
