Mrs Balls Summer Prawn & Chutney Salad
Summer is here and what better way to celebrate than with a fresh, vibrant salad that’s bursting with flavour!

Serves: 4 – 6
Preparation time: 15 – 20 minutes
Ingredients:
For the dressing:
- 2 Tbsp Mrs Balls Jalapeno Chutney
- 2 Tbsp olive oil
- 1 Tbsp lemon juice
- 1 tsp honey
- 1 tsp Dijon mustard
- Salt and pepper to taste
For the prawn salad:
- 500g cooked prawns, tails removed
- 4 cups mixed salad leaves
- 1 cup cherry tomatoes, halved
- 1 avocado, cubed
- 1 cucumber, cubed
- 1 mango, peeled and diced
- ½ red onion, thinly sliced
- ¼ cup fresh coriander, chopped
How To Make Mrs Balls Summer Prawn & Chutney Salad
- Start by preparing the dressing, in a small bowl add all the ingredients and whisk until well combined, then season to taste with salt & pepper and set aside.
- In a large serving bowl or platter, arrange the mixed salad leaves, top cherry tomatoes, cucumber, avocado, mango, cooked prawns and sliced red onions.
- Drizzle over a generous amount of the dressing just before serving and garnish with fresh coriander. Enjoy!
