Mrs Balls Summer Prawn & Chutney Salad

Summer is here and what better way to celebrate than with a fresh, vibrant salad that’s bursting with flavour!

Ingredients:

For the dressing:

  • 2 Tbsp Mrs Balls Jalapeno Chutney
  • 2 Tbsp olive oil
  • 1 Tbsp lemon juice
  • 1 tsp honey
  • 1 tsp Dijon mustard
  • Salt and pepper to taste

For the prawn salad:

  • 500g cooked prawns, tails removed
  • 4 cups mixed salad leaves
  • 1 cup cherry tomatoes, halved
  • 1 avocado, cubed
  • 1 cucumber, cubed
  • 1 mango, peeled and diced
  • ½ red onion, thinly sliced
  • ¼ cup fresh coriander, chopped

How To Make Mrs Balls Summer Prawn & Chutney Salad

  1. Start by preparing the dressing, in a small bowl add all the ingredients and whisk until well combined, then season to taste with salt & pepper and set aside.
  2. In a large serving bowl or platter, arrange the mixed salad leaves, top cherry tomatoes, cucumber, avocado, mango, cooked prawns and sliced red onions.
  3. Drizzle over a generous amount of the dressing just before serving and garnish with fresh coriander. Enjoy!
