Olive Pride Chocolate Chunk Cookies

Ingredients:
- 2 cups flour
- 1 ½ tsp baking soda
- ½ tsp salt
- ½ cup Clover Olive
- Pride blend seed oils & extra virgin olive oil
- ¾ cup brown sugar
- ¼ cup white sugar
- 2 eggs, room temperature
- 1 ½ tsp vanilla essence
- 1 cup dark chocolate chips
- Flaky salt (optional)
How To Make Olive Pride Chocolate Chunk Cookies
- In a bowl, whisk together the flour, baking soda and salt. Set aside
- In a separate bowl, combine the Olive Pride blend and sugars and beat with an electric whisk until combined.
- Add the eggs and beat for 1 minute until smooth. Add the vanilla essence.
- Fold the dry ingredients into the oil mixture until almost incorporated.
- Add ¾ cup of the chocolate chips and fold until just combined.
- Cover with plastic wrap and refrigerate for 30 minutes or until the dough can be rolled.
- Preheat the oven to 180C and prepare a baking sheet.
- Scoop 1-2 tablespoons of dough and roll into balls.
- Arrange on the baking sheet, leaving 2cm of space between cookies.
- Press a few chunks of chocolate into the top of each dough ball and top with flaky salt.
- Bake for 9-12 minutes or until the tops are puffed and edges are golden brown. Allow to cool on the baking sheet then serve.
