Olive Pride Chocolate Chunk Cookies

  • 2 cups flour
  • 1 ½ tsp baking soda
  • ½ tsp salt
  • ½ cup Clover Olive
  • Pride blend seed oils & extra virgin olive oil
  • ¾ cup brown sugar
  • ¼ cup white sugar
  • 2 eggs, room temperature
  • 1 ½ tsp vanilla essence
  • 1 cup dark chocolate chips
  • Flaky salt (optional)

How To Make Olive Pride Chocolate Chunk Cookies

  1. In a bowl, whisk together the flour, baking soda and salt. Set aside
  2. In a separate bowl, combine the Olive Pride blend and sugars and beat with an electric whisk until combined.
  3. Add the eggs and beat for 1 minute until smooth. Add the vanilla essence.
  4. Fold the dry ingredients into the oil mixture until almost incorporated.
  5. Add ¾ cup of the chocolate chips and fold until just combined.
  6. Cover with plastic wrap and refrigerate for 30 minutes or until the dough can be rolled.
  7. Preheat the oven to 180C and prepare a baking sheet.
  8. Scoop 1-2 tablespoons of dough and roll into balls.
  9. Arrange on the baking sheet, leaving 2cm of space between cookies.
  10. Press a few chunks of chocolate into the top of each dough ball and top with flaky salt.
  11. Bake for 9-12 minutes or until the tops are puffed and edges are golden brown. Allow to cool on the baking sheet then serve.
