Picnic Sliders Three Ways

3 perfect burgers! Which are you making first?

Ingredients

 

For the burger:

  • 1 – 2 Tbsp olive oil
  • 1 x 12 pack Woolworths Free Range Beef Frikkadel 
  • 8 seeded slider burger buns 
  • 8 slices cheddar cheese 
  • 1 cup shredded lettuce 
  • ½ cup gherkins, diced
  • ½ cup onions, finely diced 

For the sauce:

  • ½ cup mayonnaise 
  • 2 Tbsp tomato sauce
  • 2 Tbsp mustard sauce
  • 1 Tbsp white vinegar 
  • 1 Tbsp white sugar 
  • 1 Tbsp gherkins, finely chopped 
  • 1 Tbsp gherkins brine 
  • ¼ cup onion, finely chopped
  • 1 tsp garlic powder
  • 1 tsp onion powder

How To Make Cheesy Double Decker Sliders

  1. Start by preparing the big mac sauce, add all ingredients into a bowl and mix until well combined, then set aside. 
  2. Heat olive oil in a large non-stick pan, place the beef frikkadel into the pan, cover with a piece of baking paper and press down using a spatula to help flatten the meat slightly, remove the paper and cook for 2 – 3 minutes until browned, thin flip the patty and allow it to cook for another minute, place a slice of cheese onto each patty and cover with a lid for about 1 minute until the cheese has melted.
  3. Remove from the pan. In the same pan toast the burgers buns until slightly golden and crispy. 
  4. Slice the slider buns in half, then on the bottom half of each bun, spread a tablespoon of the prepared sauce, top with a cooked patty followed by the shredded lettuce, gherkins and onions. 
  5. Top with another burger patty, big mac sauce and lastly the other half of the bun and enjoy!

Ingredients:

 

  • 2 – 3 cups rotisserie chicken, shredded 
  • 1 cup BBQ sauce 
  • ¼ cup hot sauce, of your choice 
  • 2 chilies, chopped 
  • Salt & pepper to taste 

To serve: 

  • 6 seeded slider burger buns, halved & toasted
  • 1 ½ cups rainbow coleslaw mix

How To Make Spicy BBQ Pulled Chicken Sliders

 

 

  1. In a large bowl, add in shredded chicken, BBQ sauce, hot sauce and chili, mix until well combined and season to taste with salt & pepper. Spoon the chicken mixture onto the base of each burger bun, top with crunchy rainbow coleslaw mix and chopped gherkins.

Ingredients:

 

  • 1 Tbsp olive oil
  • 1 Tbsp salted butter
  • 250g mushrooms, sliced
  • 1 garlic clove, chopped
  • 1 – 2 sprigs fresh thyme

To serve:

  • 6 slices mozzarella cheese
  • 1 cup caramelised onions
  • 6 seeded slider burger buns
  • 1 ½ cup fresh rocket
  • ¼ cup balsamic reduction

How To Make Mushroom & Caramelised Onion Slider

  1. In a pan, heat olive oil and butter over medium heat. Add mushrooms, garlic, and thyme. Sauté for 5–7 minutes, or until mushrooms are golden, then remove the thyme sprigs. 
  2. Slice slider buns in half, place a layer of caramelised onions on each bottom half. 
  3. Top with mushrooms, mozzarella cheese, rocket and a drizzle of balsamic reduction. Place the top bun over each slider and enjoy!

Chefs Tip:
For the Big Mac slider, add a few thin slices of tomato to each slider for some freshness that complements the richness of the Big Mac sauce and cheese.
For the spicy BBQ pulled chicken slider, you can also add a few sliced jalapeños or crispy fried onions on top of the coleslaw for that extra hint of spice & texture.
For the mushroom & caramelized onion sliders, cook the mushrooms until they are golden brown this helps to release a rich umami flavour, resulting in a delicious savoury slider that compliments the sweetness of the caramelized onions.
