Roasted Chickpea and Cauli Salad with Green Goddess Dressing

A salad is just a salad until you add a classic dressing that transforms it to the next level.

Ingredients:

1 head cauliflower, cut into florets
1 can chickpeas, drained
2 tbsp Cajun chicken spice
Olive oil
1 large avocado
½ cup Classic dairy snack
1 cup parsley
2 tbsp spring onions
1 garlic clove
2 tbsp lemon juice
¼ cup water
Salt
Pepper
80g baby spinach

Method:

Preheat the oven to 180°C

In a bowl, combine the cauliflower, chickpeas, Cajun chicken spice and drizzle with olive oil and toss. Roast in the oven for 20-30 minutes until the chickpeas and cauliflower are crisp. In a blender, blend the avocado, Classic dairy snack, parsley, spring onion, garlic, lemon juice, water, salt and pepper until smooth. Drizzle a bit of olive oil on the baby spinach and place platter. Remove the cauliflower and chickpeas from oven, toss onto the baby spinach and drizzle over the green goddess dressing and serve.
