Simply Chicken Sheet Pan Waffles

A savoury take on the waffle!

Ingredients:

500g flapjack/pancake ready mix
500ml milk
2 large eggs, beaten
30ml oil
½ Cup fried mushrooms
½ red pepper, diced
1/3 Cup feta, crumbled  
¼ Cup fried onions
handful baby spinach

Topping:
1 Cup cheddar cheese, grated
6 Simply Chicken Original Viennas, sliced into chunks
2-2 ½ Cups prepare scrambled egg

Method:

Preheat a waffle iron and spray with a non-stick cooking spray.
To a mixing bowl add the flapjack/pancake ready mix, milk, eggs and oil, stir until just combined.
Add the mushrooms, fried onions, pepper, feta and baby spinach to the batter and fold in.
Pour 1/3 cup of batter into the waffle iron and cook the batter. Once the waffles are cooked and golden, lay them flat onto a sheet pan. Repeat until all the batter has been cooked off.
Add some scrambled egg and chopped viennas to each waffle and scatter some cheese over.
Place into the oven to bake for 10-15 minutes until the cheese has turned golden brown and melted.
Serve warm.

Chefs Tip: You can change up the toppings and use any of your favourite Simply Chicken products.
