Recipe by Amber Wright

Ingredients:

  • 1kg lean mince meat
  • 1 large onion
  • 2 Tbsp oil
  • 4 Tbsp tomato paste + 1 Tablespoon Worcestershire sauce
  • 1 tsp basil
  • 1 tsp oregano
  • 1 tsp thyme
  • 4 cups water
  • Salt
  • Pepper and a pinch of sugar
  • Grated parmesan cheese
  • Garlic, optional

How To Make Bolognese

  1. Chop the onion and fry in oil until cooked and transparent. Add mince and cook well, mashing with a fork occasionally to break up any lumps. A potato masher will do.
  2. Cook until the mince is a nice brown colour. Pour off extra fat. Add canned tomatoes with their juice that have been chopped up.
  3. Add herbs, tomato paste, water, salt and pepper, worcestshire sauce and sugar.
  4. When the sauce comes to a boil, reduce the heat and cook very slowly uncovered until nearly all the liquid has evaporated. This should take approximately 1 ½ hours or so. About 1 hour if used in lasagna.
  5.  When cooked pour over hot, drained spaghetti and sprinkle with parmesan cheese.
