Recipe by Amber Wright
Ingredients:
- 1kg lean mince meat
- 1 large onion
- 2 Tbsp oil
- 4 Tbsp tomato paste + 1 Tablespoon Worcestershire sauce
- 1 tsp basil
- 1 tsp oregano
- 1 tsp thyme
- 4 cups water
- Salt
- Pepper and a pinch of sugar
- Grated parmesan cheese
- Garlic, optional
How To Make Bolognese
- Chop the onion and fry in oil until cooked and transparent. Add mince and cook well, mashing with a fork occasionally to break up any lumps. A potato masher will do.
- Cook until the mince is a nice brown colour. Pour off extra fat. Add canned tomatoes with their juice that have been chopped up.
- Add herbs, tomato paste, water, salt and pepper, worcestshire sauce and sugar.
- When the sauce comes to a boil, reduce the heat and cook very slowly uncovered until nearly all the liquid has evaporated. This should take approximately 1 ½ hours or so. About 1 hour if used in lasagna.
- When cooked pour over hot, drained spaghetti and sprinkle with parmesan cheese.
