Spicy Chicken & Mushroom Potato Hash

Ingredients:

  • 1 Tbsp oil
  • 1 onion, chopped
  • 2 Tbsp crushed garlic
  • 1 Tbsp tomato paste
  • 3 large potatoes, peeled & cubed
  • 250g mushrooms, sliced
  • 1 ½ tsp smoked paprika
  • 2 tsp chili flakes
  • 2 Tbsp BBQ spice
  • 2 cups spinach, chopped
  • 2 cups leftover chicken, chopped

To serve:

  • roasted sundried tomatoes, optional
  • sour cream
  • avocado
  • fried eggs
  • tortilla wraps, toasted

How To Make Spicy Chicken & Mushroom Potato Hash

  1. Heat olive oil in a pan, add onions and cook until translucent, then add in garlic and potatoes, cook for 5 minutes.

  2. Add mushrooms along with tomato paste and spices, add water cover and cook for another 10 minutes, lastly stir in spinach and cook until spinach has wilted, stir in chicken.

  3. Season to taste and serve immediately with toppings of your choice.
