
Sweetcorn and Ham Fritters

Ingredients:
- 1 cup flour
1 teaspoon baking powder
2 eggs
1/2 cup milk
1 tablespoon oil
1 cup sweetcorn kernels
1 spring onion, finely chopped
1 tablespoon chives, finely chopped 4 slices of ham, diced or roughly torn 1/2 cup cheese, grated
How To Make Sweetcorn and Ham Fritters
- In a mixing bowl, combine flour and baking powder.
- Add eggs, milk and oil. Using a whisk combine until smooth.
- Add the sweetcorn, spring onion, chives, ham and cheese. Mix with a spoon until everything is well
coated. - In a pan over medium heat, add butter or oil. Scoop about a heaped tablespoon and half for each fritter, cook until golden on each side.
- Serve with mini chicken kebabs and other lunch box extra’s your child prefers.
Chefs Tip:
- For more uniformed shaped fritters, these can be made in a waffle maker or grease a non-stick cookie cutter and cook in the pan, remove when ready to flip.
- Perfect for batch making, once cool, place in the freezer and place in the air fryer or pop up toaster, allow to thaw a few minutes before.
- You can add any vegetables that your child prefers
- These are also a great option for breakfast or an afterschool snack
