Grilled Chicken & Corn Salad with Peaches and Asian Dressing

Ingredients:
- 4 chicken breasts
- 4 Tbsp butter
- 1 can KOO whole kernel corn
- 1 can KOO peach slices in syrup
- 1 tsp red chili flakes (more if desired)
- 200g cherry tomatoes, halved
- 1 sliced red onion
- 1 small cucumber cut in cubes
- Handful fresh rocket
- Seasoning to taste
For the dressing:
- ¼ cup olive oil
- ½ tsp garlic flakes
- ¼ cup Rice vinegar
- 2 Tbsp KOO peach syrup
- 1 tsp soy sauce
For the dressing:
- Sesame seeds
How To Make Grilled Chicken & Corn Salad with Peaches and Asian Dressing
- Pan fry your seasoned chicken breasts in 2 Tbsp butter until cooked through. Appx 6 minutes per side.
- Coat chicken with melted butter during the cooking process.
- In a separate pan, fry your corn and peach slices in butter with chili flakes and seasoning.
- Slice up your cooked and cooled chicken breast.
- Add the chicken, along with all your other salad ingredients in your serving bowl.
- Mix all the ingredients for your dressing.
- Pour the dressing over your salad and sprinkle on some sesame seeds.
- Add some extra salt if desired.
