Grilled Chicken & Corn Salad with Peaches and Asian Dressing

Ingredients:

  • 4 chicken breasts
  • 4 Tbsp butter
  • 1 can KOO whole kernel corn
  • 1 can KOO peach slices in syrup
  • 1 tsp red chili flakes (more if desired)
  • 200g cherry tomatoes, halved
  • 1 sliced red onion
  • 1 small cucumber cut in cubes
  • Handful fresh rocket
  • Seasoning to taste

For the dressing:

  • ¼ cup olive oil
  • ½ tsp garlic flakes
  • ¼ cup Rice vinegar
  • 2 Tbsp KOO peach syrup
  • 1 tsp soy sauce

For the dressing:

  • Sesame seeds

How To Make Grilled Chicken & Corn Salad with Peaches and Asian Dressing

  1. Pan fry your seasoned chicken breasts in 2 Tbsp butter until cooked through. Appx 6 minutes per side.
  2. Coat chicken with melted butter during the cooking process.
  3. In a separate pan, fry your corn and peach slices in butter with chili flakes and seasoning.
  4. Slice up your cooked and cooled chicken breast.
  5. Add the chicken, along with all your other salad ingredients in your serving bowl.
  6. Mix all the ingredients for your dressing.
  7. Pour the dressing over your salad and sprinkle on some sesame seeds.
  8. Add some extra salt if desired.
