2-ways with Rotisserie Chicken
Make mealtime a breeze with rotisserie chicken!
Ingredients:
- 2 cups rotisserie chicken, shredded
- 1 packet corn tortilla chips
- 1 cup cheddar or mozzarella cheese, grated
- 1 tomato, diced
- ½ onion, finely chopped
- 1 small jalapeño, sliced (optional)
- ¼ cup sour cream
- ¼ cup guacamole or mashed avocado
- 2 tbsp fresh coriander, chopped
- Salt & pepper, to taste
How To Make Rotisserie Chicken Nachos
- Preheat the oven to 180°C
- Spread a layer of tortilla chips on a baking tray or oven-safe dish.
- Scatter shredded chicken, onions, tomatoes, jalapeños, and cheese evenly over the chips.
- Bake for 8–10 minutes, or until the cheese is melted and bubbly.
- Once out of the oven, add dollops of sour cream and guacamole, then sprinkle with bacon bits and fresh coriander.
- Season with salt and pepper to taste.

- Lettuce

- Tomatoes, diced
- Onions, diced
- Salt & pepper to Taste

How To Make Rotisserie Chicken Wrap
- Shred the rotisserie chicken and dice your tomatoes and onions.
- Lightly toast or warm your wholewheat wraps in a dry pan or microwave for a few seconds until
soft and pliable. - Spread a generous layer of garlic mayo over the wrap.
- Add a layer of lettuce, followed by shredded chicken, tomatoes, onions, and cheese.
- Sprinkle over bacon bits for extra crunch and flavour.
- Season with salt and pepper to taste.
- Fold in the sides and roll the wrap tightly.
- Slice in half if desired.
