2-ways with Rotisserie Chicken

Make mealtime a breeze with rotisserie chicken!

 

Ingredients:

  • 2 cups rotisserie chicken, shredded
  • 1 packet corn tortilla chips
  • 1 cup cheddar or mozzarella cheese, grated
  • 1 tomato, diced
  • ½ onion, finely chopped
  • 1 small jalapeño, sliced (optional)
  • ¼ cup sour cream
  • ¼ cup guacamole or mashed avocado
  • 2 tbsp fresh coriander, chopped
  • Salt & pepper, to taste

How To Make Rotisserie Chicken Nachos

  1. Preheat the oven to 180°C
  2. Spread a layer of tortilla chips on a baking tray or oven-safe dish.
  3. Scatter shredded chicken, onions, tomatoes, jalapeños, and cheese evenly over the chips.
  4. Bake for 8–10 minutes, or until the cheese is melted and bubbly.
  5. Once out of the oven, add dollops of sour cream and guacamole, then sprinkle with bacon bits and fresh coriander.
  6. Season with salt and pepper to taste.

  • Lettuce
  • Garlic Mayo
  • Cheese, grated
  • Tomatoes, diced
  • Onions, diced
  • Salt & pepper to Taste
  • Bacon Bits

How To Make Rotisserie Chicken Wrap

  1. Shred the rotisserie chicken and dice your tomatoes and onions.
  2. Lightly toast or warm your wholewheat wraps in a dry pan or microwave for a few seconds until
    soft and pliable.
  3. Spread a generous layer of garlic mayo over the wrap.
  4. Add a layer of lettuce, followed by shredded chicken, tomatoes, onions, and cheese.
  5. Sprinkle over bacon bits for extra crunch and flavour.
  6. Season with salt and pepper to taste.
  7. Fold in the sides and roll the wrap tightly.
  8. Slice in half if desired.
