5–Ingredient Sweet Corn Chowder

Ingredients:
- 2 cups frozen sweet corn
- 1 small onion, finely chopped
- 2 cups vegetable stock
- ½ tsp paprika
- 3 tbsp Ellis Brown creamer (powdered or liquid, prepared as directed)
Optional:
- Salt and black pepper, to taste
- Chopped fresh parsley, extra corn, or croutons for garnish
- Dash of oil or butter for sautéing (can skip if dry-sautéing)
How To Make 5–Ingredient Sweet Corn Chowder
- Start by heating a drizzle of oil in a medium pot over medium heat.
- Sauté the chopped onion until soft and translucent, about 3 – 4 minutes.
- Add the frozen sweet corn and stir through, allowing it to heat and lightly toast for a few minutes.
- Pour in the vegetable stock and paprika, bring to a gentle boil, then reduce the heat and let it simmer for 10 minutes.
- Once the corn is tender, use a stick blender to partially blend the mixture – leaving some texture if you prefer it chunky.
- Stir in the prepared Ellis Brown creamer and season to taste with salt and black pepper.
- Simmer for another 2–3 minutes to allow everything to warm through.
- Serve hot with a sprinkle of herbs, extra corn kernels, or crunchy croutons for a simple, satisfying winter meal.
