Abi's Signature Cheesecake
Happiness is homemade… especially when it’s cheesecake.
Ingredients:
- 500g Cream Cheese, at room temperature
- 100g Caster Sugar
- 3 large eggs, room temperature
- 1 cup of Cream
- 1 tsp Vanilla Extract
- A pinch of Salt
How To Make Abi’s Signature Cheesecake
- Prep: Preheat your oven to 240°C (or 220°C for fan-forced) for at least 30 minutes. Line a 15cm–20cm cake tin (or springform pan) with two large, overlapping sheets of crinkled parchment paper, making sure the paper extends at least 5cm above the rim.
- Mix: Beat the softened cream cheese and sugar together until completely smooth and no lumps remain.
- Add Eggs: Add the eggs one at a time, incorporating each fully before adding the next.
- Combine: Pour in the cream, vanilla extract, and salt, mixing until just combined.
- Bake: Pour the batter into the lined pan and gently tap it on the counter a few times to release air bubbles. Bake for 30 minutes. The top should be a deep, dark caramel (almost burnt), while the center still has a very noticeable jiggle. [1, 2]
- Cool & Chill: Remove from the oven and let the cheesecake cool completely in the tin.
