African Golden Spicy Black Garlic Pasta
This spicy black garlic pasta is an exploration of flavours that makes for the perfect low budget weeknight dinner. Ready in under 20 minutes, this recipe could easily make it to that weekly favourite list!

Ingredients:
African Gold Extra Virgin Olive Oil
1 cup button mushrooms, sliced
5 cloves black garlic
2 birds eye chilli, finely chopped
3 anchovy fillets
2 cups linguine pasta, cooked
½ cup garlic and herb croutons, roughly crushed
2 tbsp parsley, finely chopped
Salt and pepper
Method:
Heat a skillet and add a generous amount of olive oil. Saute the mushrooms on high heat until golden brown and slightly crisp. Transfer the mushrooms into a bowl and set aside.
Add more olive oil to the pan, add in the garlic, chilli and anchovy and saute gently for 1-2 minutes. Add ½ cup hot water and using the back of a spoon, mash the garlic and anchovy until a smooth sauce forms.
Add the cooked linguine and toss the pasta. Add ½ cup of the pasta cooking water and continue tossing to cook.
Drizzle over more olive oil and add the mushrooms. Season to taste and add more water if needed.
In a separate bowl, combine the croutons and parsley.
Serve the pasta in bowl and top with the crouton mixture.
Chefs Tip: If black garlic is not easily accessible to you, you can used roasted garlic.
