B-well Spicy Chicken-cado Sarmie with Chipotle Aioli

The bread is so crispy, the tuna is creamy and packed with flavor, and the combination of pesto and avocado is just so refreshing!

¾ cup B-well Original Tangy Mayonnaise
6 slices sourdough bread
1 ½ cups shredded cooked chicken
1 tbsp lemon juice
½ small red onion, diced
2 jalapeno peppers, diced
Handful fresh coriander, chopped
½ cup basil pesto
1 tomato, sliced
1 avocado sliced
Salt and pepper
B-well Olive Oil Cooking Spray

Chipotle aioli:
¾ cup B-well Original Tangy Mayonnaise
2 garlic cloves
1 chipotle pepper
Juice of 1 lime
Salt and pepper


To prepare the chicken filling; combine the shredded chicken, mayo, lemon juice, red onion, jalapenos, coriander, salt and pepper. Mix well.
Make the chipotle aioli, combine all the ingredients into a blender and blend until smooth. Set aside.
Heat a grill or panini press and spray the cooking spray. Add two slices of bread per sandwich and toast until crispy and golden brown.
On one side of the bread, add a layer of pesto, followed by avocado, tomato and the chicken filling. Add the chipotle mayo on the other slice of the bread and close the sandwich.
Cut in half and enjoy with your favourite hot sauce

Chefs Tip: If artichokes are not accessible to you or are not your go to, you may substitute them with sautéed mushrooms or cauliflower.
