Serves: 2-4
Time: 45 minutes
Recipe by: Thando Manyoni
Ingredients:
B-well Canola cooking spray
1kg Frozen potato chips
1 cup Gouda cheese, grated
500g Lean beef mince
1 egg
½ cup bread crumbs
1 tbsp ground coriander
1 tbsp oregano
1 small white onion, finely chopped
2 cloves garlic, finely chopped
4 slices cheddar cheese
300g Mixed Leaf Salad, rinsed
½ red onion, finely sliced
¼ cup sliced jalapenos
½ cup Original Tangy mayonnaise
Method:
Heat a waffle iron and spray with cooking spray.
Place two-three handfuls of potato chips on to the waffle iron and sprinkle over the cheese. Force close the waffle iron until shut, allowing the chips to defrost as you close. Cook until golden brown on both sides.
Make the burger patties by combining the beef mince, egg, bread crumbs, coriander, oregano, white onion and garlic in a bowl. Season with salt and pepper and shape into a square or circle, depending on the shape of your waffle iron. Heat a pan and drizzle oil, cook until browned and to your preferred doneness then remove from the heat. Keep the patties in the pan and place a slice of cheese on each, cover with a lid to melt.
To assemble, starting with the potato waffle as the base, top with the leaf salad, followed by the red onion, jalapenos, the beef patty and finish with a generous amount of mayo. Serve as and open burger or top with another layer of potato waffle
Chefs Tip: When closing the waffle iron, be patient as the chips defrost as the waffle iron closes.
