Banana Bread Baked Oats

All the cozy, comforting flavours of banana bread in a warm oat bake!

Ingredients:

  • 1 cup Bokomo Traditional Oats
  • 1 ripe banana, mashed
  • ¾ cup milk (dairy or plant-based)
  • 1 egg (or flax egg for vegan)
  • 1½ tbsp honey or maple syrup
  • ¾ tsp baking powder
  • ½ tsp cinnamon
  • ½ tsp vanilla extract
  • Pinch of salt
  • 2 tbsp chopped nuts or chocolate chips (optional)

How To Make Banana Bread Baked Oats

  1. Preheat your oven to 180°C (350°F) and lightly grease a small baking dish.
  2. In a bowl, mash the banana, then whisk in the milk, egg, honey (or maple syrup), and vanilla extract until smooth.
  3. Stir in the Bokomo Traditional Oats, baking powder, cinnamon, and a pinch of salt, ensuring everything is well incorporated.
  4. If using nuts  or chocolate chips, fold them in at this stage.
  5. For a cake-like consistency, blend the mixture until smooth before pouring it into the baking dish.
  6. Transfer the mixture to the prepared dish and bake for 25–30 minutes, or until the top is golden brown and set in the centre.
  7. Let it cool slightly before serving warm.
  8. Enjoy as is, or top with extra banana slices, a drizzle of honey, or a dollop of yogurt.
