Basil Pesto

Makes: 1 jar
Preparation time: 8 – 10 minutes

Ingredients:

  • 2 cups fresh basil leaves
  • ½ cup Parmesan cheese, grated
  • ⅓ cup pine nuts
  • 2 garlic cloves, peeled
  • ½ cup olive oil, plus 2 Tbsp extra if needed
  • 2 Tbsp lemon juice
  • Salt & pepper to taste

How To Make Basil Pesto

  1. In a dry pan over medium heat, toast the pine nuts for 2–3 minutes, stirring frequently, until golden and fragrant.
  2. Let them cool slightly.
  3. In a food processor or high-speed blender, combine the basil, toasted nuts, garlic, and Parmesan.
  4. Pulse until the mixture is just combined, then slowly drizzle in olive oil until the pesto is smooth but still has some texture.
  5. Remove from the food processor, add lemon juice and season to taste with salt & pepper.
