Beef Stew with Samp and Hot Chakalaka
Impress family and friends with that ACE taste!
Ingredients:
- Samp
- 2 cups ACE Quick Cook Samp
- 2 cups water
- salt to taste
- Beef Stew
- 3 Tbsp oil
- 1.5 kg beef chunks
- 1-2 large onions, thinly sliced
- 2 garlic cloves, grated
- 6 carrots, peeled and cut into chunks
- one big handful of parsley, chopped
- 1 sachet of Benny’s Beef Stock
- 2 cups of boiling water
- salt and pepper to taste
- To serve
- 1 x can KOO Hot and Spicy Chakalaka With
- Beans, warmed
- parsley, chopped
- 8 x Wide neck jars
How To Make
- Heat the oil in a large pot and brown the beef in batches. Remove and season to taste.
- In the same pot fry the onions until golden brown.
- Add more oil if you see it is too dry. Stir the garlic in.
- Return the meat to the pot and add the carrots. Stir the beef stock and water in.
- The water must just cover the meat. If you need a bit more add a bit more.
- Bring to a simmer, then cover and reduce the heat.
- Cook for 2 hours or until tender – stirring occasionally. Taste and season again.
- To serve scoop some samp in the jar, then some beef stew and finish with a spoon of chakalaka.
- Add another layer and a sprinkling of parsley. Serve immediately.
