
Berry Loaded Coconut French Toast
Spice up your French Toast game with this coconut-infused version and a home-made berry sauce.

Ingredients:
For the Coconut French Toast:
- 8 slices of thick brioche bread
- 3 large eggs
- 1 cup coconut cream
- ¼ cup milk
- 1 tsp vanilla essence or coconut flavouring
- ½ tsp ground cinnamon
- 1 Tbsp sugar
- Butter or oil, for cooking
For the Berry Topping:
- 2 ½ cups frozen mixed berries
- 2 Tbsp sugar
- 1 tsp lemon juice
- ¼ cup water
To serve:
- icing sugar
- whipped cream, optional
- maple syrup
- mint sprigs
- fresh berries
How To Make Berry Loaded Coconut French Toast
- Start by preparing the berry topping, in a small saucepan add frozen mixed berries, sugar, lemon juice and water.
- Cook for 5 – 7 minutes over medium heat, stirring occasionally until the sauce thickens, then remove from the heat and allow it to cool.
- Heat a large non-stick pan, add in butter and allow it to melt, meanwhile in a shallow bowl, whisk together eggs, coconut milk, vanilla essence, cinnamon and sugar until smooth.
- Dip each slice of bread into the egg mixture, allowing it to soak for a few seconds on each side. Place soaked bread into the heated pan and cook for 2 – 3 minutes on each side until golden brown and slightly crispy.
- Place the cooked French toast on a plate, spoon over a generous amount of berry sauce. Garnish with a dusting of icing sugar, fresh berries and mint.
