Berry Loaded Coconut French Toast

Spice up your French Toast game with this coconut-infused version and a home-made berry sauce.

Ingredients:

 

For the Coconut French Toast:

  • 8 slices of thick brioche bread
  • 3 large eggs
  • 1 cup coconut cream
  • ¼ cup milk
  • 1 tsp vanilla essence or coconut flavouring 
  • ½ tsp ground cinnamon
  • 1 Tbsp sugar
  • Butter or oil, for cooking

For the Berry Topping:

  • 2 ½ cups frozen mixed berries
  • 2 Tbsp sugar
  • 1 tsp lemon juice
  • ¼ cup water

To serve:

  • icing sugar
  • whipped cream, optional
  • maple syrup
  • mint sprigs 
  • fresh berries 

How To Make Berry Loaded Coconut French Toast

  1. Start by preparing the berry topping, in a small saucepan add frozen mixed berries, sugar, lemon juice and water. 
  2. Cook for 5 – 7 minutes over medium heat, stirring occasionally until the sauce thickens, then remove from the heat and allow it to cool.
  3. Heat a large non-stick pan, add in butter and allow it to melt, meanwhile in a shallow bowl, whisk together eggs, coconut milk, vanilla essence, cinnamon and sugar until smooth. 
  4. Dip each slice of bread into the egg mixture, allowing it to soak for a few seconds on each side. Place soaked bread into the heated pan and cook for 2 – 3 minutes on each side until golden brown and slightly crispy.

  5. Place the cooked French toast on a plate, spoon over a generous amount of berry sauce. Garnish with a dusting of icing sugar, fresh berries and mint.
