How To Make Strawberry Cheesecake Bites

  1. Add the strawberry cake sponge into a large mixing bowl and crumble into fine crumbs, then add in cream cheese, jam, icing sugar and vanilla essence. Mix well until the mixture forms a dough-like consistency.
  2. Roll the mixture into balls and place them onto a lined baking tray, chill the balls in the refrigerator for 20 – 30 minutes.
  3. Add chocolate and coconut oil into a bowl, then place into the microwave and heat, stirring every 20 seconds until the chocolate is smooth and melted. Insert a skewer stick or toothpick into each ball, then dip into the melted chocolate, then place it back onto the lined baking tray.
  4. Decorate with crushed biscuits and sprinkles white the coating is still wet. Allow it to set at room temperature for a few minutes, then chill in the fridge until you are ready to serve.
