
Strawberry Cheesecake Bites
If you’re looking for a sweet treat that’s as easy to make as it is delicious, then these strawberry cheesecake bites are the perfect choice!

Ingredients:
- 1 ready-made strawberry flavoured cake sponge, crumbled
- ½ cup plain cream cheese, softened
- 2 Tbsp strawberry jam
- 2 Tbsp icing sugar
- ½ tsp vanilla essence
For the coating
- 1 cup white chocolate, melted
- 2 tsp coconut oil
- ½ tsp pink gel food colouring, optional
For decorating:
- ¼ cup crushed biscuits of your choice
- Pink & white sprinkles
How To Make Strawberry Cheesecake Bites
- Add the strawberry cake sponge into a large mixing bowl and crumble into fine crumbs, then add in cream cheese, jam, icing sugar and vanilla essence. Mix well until the mixture forms a dough-like consistency.
- Roll the mixture into balls and place them onto a lined baking tray, chill the balls in the refrigerator for 20 – 30 minutes.
- Add chocolate and coconut oil into a bowl, then place into the microwave and heat, stirring every 20 seconds until the chocolate is smooth and melted. Insert a skewer stick or toothpick into each ball, then dip into the melted chocolate, then place it back onto the lined baking tray.
- Decorate with crushed biscuits and sprinkles white the coating is still wet. Allow it to set at room temperature for a few minutes, then chill in the fridge until you are ready to serve.
