Boerewors & Caramelised Onion Braai Pie
Nothing says South African braai quite like a savoury pie fresh off the grill!
Serves: 6–8
Preparation time: 25 minutes
Cooking time: 20–25 minutes
Ingredients:
- 2 sheets puff pastry (store-bought, thawed)
- 1½ cups grated cheddar cheese
- 1 large onion, thinly sliced
- 1 tbsp olive oil or butter
- 1 cup sliced mushrooms (optional)
- 300g boerewors, sliced or chopped into small pieces
- 1–2 tsp fresh thyme or mixed herbs (optional)
- Salt and pepper to taste
- 1 egg (beaten, for brushing)
How To Make Boerewors & Caramelised Onion Braai Pie
- In a pan over medium heat, cook the boerewors pieces until browned and cooked through (about 6–8 minutes).
- Set aside.
- In the same pan, add olive oil or butter.
- Add sliced onions and cook slowly for 10–15 minutes until golden and sweet.
- Add mushrooms and herbs, cook for another 5 minutes.
- Season with salt and pepper.
- Let cool slightly.
- Mix the cooked boerewors into the onion and mushroom mixture.
- Roll out one sheet of pastry on a lightly floured surface or baking paper.
- Spread the filling evenly over the pastry, leaving a 2 cm border.
- Sprinkle grated cheese evenly on top.
- Cover with the second pastry sheet.
- Press the edges firmly together with a fork to seal.
- Brush the top with beaten egg.
- Place the pie into a greased hinged braai grid (use foil if desired to prevent sticking).
- Cook over medium coals for about 10–12 minutes per side, until pastry is golden and crisp.
- Turn carefully to avoid burning.
- Let cool for 5 minutes before slicing.
- Serve warm and enjoy!
