Braai Snoek Tacos & Savoury Garlic Bread S’mor with Homemade Onion Marmalade

Ingredients:

For the glazed snoek:

  • 1 medium snoek, cleaned & butterflied
  • 4 Tbsp pre-made or storebought garlic butter
  • 2 Tbsp apricot jam
  • Juice of 1 lemon
  • Salt & pepper

For the slaw:

  • 2 cups rainbow slaw
  • ½ cup mayonnaise
  • 2 Tbsp plain yoghurt
  • 1 tsp Dijon mustard
  • 1 tsp honey
  • Squeeze of lime or lemon juice
  • Salt & pepper

To serve:

  • 8 small flour tortillas
  • Fresh coriander, chopped
  • Pickled red onions
  • Lime wedges

How To Make Braai Snoek Tacos

  1. In a saucepan add garlic butter, apricot jam and lemon juice.
  2. Pat the snoek dry using paper towel, season with salt & pepper.
  3. Place the skin snoek skin side down on the braai grid.
  4. Brush generously with the garlic butter glaze.
  5. Braai over medium heat for 10 – 15 minutes, basting occasionally until cooked through.
  6. Flake the fish into chunks discarding bones & skin.
  7. In a bowl add slaw, mayonnaise, yoghurt, Dijon mustard, honey, lemon juice and season with salt & pepper.
  8. Mix until well combined and set aside.
  9. To assemble the tacos, slightly heat the tortillas on the braai or in a heated pan.
  10. Layer the slaw, flaked snoek, coriander and pickled onions.
  11. Serve with lime wedges.

Ingredients:

  • 1 loaf storebought garlic bread
  • 150g brie cheese
  • 6 – 8 slices sandwich ham
  • Skewer sticks, soaked

For the onion marmalade:

  • 2 Tbsp olive oil
  • 2 large onions, thinly sliced
  • 1 Tbsp brown sugar
  • 2 Tbsp balsamic vinegar
  • ¼ tsp salt
  • Pinch of black pepper

How To Make Savoury Garlic Bread S’mor with Homemade Onion Marmalade

  1. Heat oil in a pan over medium heat, add in sliced onions and a pinch of salt cook slowly for 10 – 15 minutes, stirring occasionally, until soft and starting to caramelize.
  2. Stir in brown sugar and balsamic vinegar, continue to cook for another 5 – 10 minutes until the onions are golden and jammy.
  3. Set aside and allow it to cool.
  4. Slice the garlic bread, layer a slice of ham, a spoonful onion marmalade and slices of brie.
  5. Top with another slice of garlic bread.
  6. Skewer through the centre to hold everything together.
  7. Place the skewered s’mors over medium heat.
  8. Turn carefully every 1 – 2 minutes until the brie cheese is melted and the garlic bread is golden and slightly crispy.
  9. Serve immediately and enjoy.
