Farmers Market Breakfast Frittata

A light, flavourful dish, packed with seasonal vegetables!

Ingredients:

  • 6 large eggs
  • 1 cup of milk or cream for a richer texture
  • 1 Tbsp olive oil
  • 1/2 onion, diced
  • 1 bell pepper, diced
  • 4 baby marrow, diced
  • 1 cup of cherry tomatoes, halved
  • 1 cup fresh spinach or kale, chopped
  • 1/2 cup shredded cheddar cheese or feta
  • Salt and pepper to taste
  • Fresh herbs basil or parsley for garnish

How To Make Farmers Market Breakfast Frittata

  1. Preheat oven on 180°C.
  2. Heat olive oil in a large cast-iron skillet over medium heat.
  3. Add the onion and bell pepper and sauté for about 5 minutes until softened.
  4. Add the diced baby marrows and halved cherry tomatoes to the skillet.
  5. Cook for another 3-4 minutes until the vegetables are tender.
  6. Stir in the spinach (or kale) and cook until wilted, about 1-2 minutes.
  7. In a bowl, whisk together the eggs, milk, salt, and pepper.
  8. Pour this mixture evenly over the cooked vegetables in the skillet.
  9. Sprinkle the shredded cheese on top of the egg mixture.
  10. Transfer the skillet to the oven and bake for 15-20 minutes, or until the eggs are set and slightly golden on top.
  11. Once baked, remove from the oven and allow it to cool for a couple of minutes.
  12. Garnish with fresh herbs, if desired.
  13. Slice and enjoy!
