
Farmers Market Breakfast Frittata
A light, flavourful dish, packed with seasonal vegetables!

Ingredients:
- 6 large eggs
- 1 cup of milk or cream for a richer texture
- 1 Tbsp olive oil
- 1/2 onion, diced
- 1 bell pepper, diced
- 4 baby marrow, diced
- 1 cup of cherry tomatoes, halved
- 1 cup fresh spinach or kale, chopped
- 1/2 cup shredded cheddar cheese or feta
- Salt and pepper to taste
- Fresh herbs basil or parsley for garnish
How To Make Farmers Market Breakfast Frittata
- Preheat oven on 180°C.
- Heat olive oil in a large cast-iron skillet over medium heat.
- Add the onion and bell pepper and sauté for about 5 minutes until softened.
- Add the diced baby marrows and halved cherry tomatoes to the skillet.
- Cook for another 3-4 minutes until the vegetables are tender.
- Stir in the spinach (or kale) and cook until wilted, about 1-2 minutes.
- In a bowl, whisk together the eggs, milk, salt, and pepper.
- Pour this mixture evenly over the cooked vegetables in the skillet.
- Sprinkle the shredded cheese on top of the egg mixture.
- Transfer the skillet to the oven and bake for 15-20 minutes, or until the eggs are set and slightly golden on top.
- Once baked, remove from the oven and allow it to cool for a couple of minutes.
- Garnish with fresh herbs, if desired.
- Slice and enjoy!
