Preheat oven to 180°C, place store-bought tart shells into the oven for 5 minutes, then remove from the oven and allow to cool slightly.
In a small mixing bowl add sugar and cinnamon and mix until well combined, fill each pastry tart shell with Clover Custard, then sprinkle over some cinnamon sugar and make sure to distribute it evenly, then use a blowtorch and caramelize the sugar.
