
Budget Friendly Chicken Fried Rice
With just a few affordable ingredients and a simple method, you’ll have a dish that feels indulgent without breaking the bank!

Ingredients:
- 2 cups cooked rice (preferably day-old)
- 2 Tbsp olive oil
- 2 eggs, beaten
- 1 ½ cups cooked chicken, shredded or diced
- 1 cup frozen peas & corn
- 1/2 cup diced carrots
- 3 Tbsp soy sauce or Worcestershire sauce
- ¼ cup chutney
- 2 cloves garlic, minced
- Salt and pepper, to taste
To serve:
- Spring onion, chopped
How To Make Budget Friendly Chicken Fried Rice
- Heat half of the oil in a large skillet or wok over medium heat. Pour in the beaten eggs and scramble until just set. Remove and set aside. In the same skillet, add the remaining oil. Sauté garlic, frozen peas, corn and carrots until tender about 3–4 minutes. Add the chicken and stir-fry for another 2 minutes to heat through. Push the veggies and chicken to the side of the skillet. Add the rice to the center and fry for 2–3 minutes, breaking up clumps as needed. Add in Worcestershire sauce and chutney, then toss until evenly coated. Stir the scrambled eggs back into the skillet along with the chopped spring onions. Mix well and serve immediately.
Chefs Tip:
- Make sure your pan is hot this helps to achieve a smoky flavour and prevents the rice from sticking.
- If your leftover rice is too hard, microwave it with a damp paper towel for 30 seconds to soften before frying.
