Budget-Friendly Stir Fries

Just in time for the new year!

Ingredients:

  • 2 Tbsp canola oil
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 2 carrots, peeled and sliced 
  • 1 bell pepper (or any vegetable you have, like cabbage, baby marrows), sliced
  • 2 cups frozen mixed vegetables (like peas, corn, and green beans)
  • 2 tablespoons soy sauce
  • 1 tablespoon honey

Cooked noodles (for serving)

How To Make  Vegetable Stir Fry

  1. Slice the onion, garlic, carrots, and bell pepper. Heat the vegetable oil in a large skillet or wok over medium-high heat. 
  2. Add the onion and garlic to the pan Stir-fry for 2-3 minutes until they become fragrant. 
  3. Add the sliced carrots, bell pepper, and frozen mixed vegetables. Stir-fry for about 5-7 minutes until they’re tender but still slightly crisp. 
  4. Pour in the soy sauce and add the sugar (optional) to sweeten the sauce. Stir everything together to coat the veggies evenly. 
  5. Serve the stir-fry over noodles.

Ingredients:

  • 2 packets ramen noodles
  • 250g sliced mushrooms
  • 1 cup shredded red cabbage 
  • 2 Tbsp olive oil
  • 2 mixed peppers, thinly sliced
  • 1 Tbsp crushed garlic & ginger 
  • 1 head broccoli, cut into florets 
  • 1 chili, chopped
  • 1 ½ Tbsp soy sauce 
  • ¼ cup sweet chili sauce

To serve:

  • spring onion 
  • sesame seeds, optional

How To Make Ramen Noodle Stir Fry  

  1. Boil the ramen noodles according to the package instructions. Drain, rinse under cold water to stop the cooking, and set aside. 
  2. Heat olive oil in a large skillet or wok over medium heat. Add the crushed garlic, ginger, and chopped chili, sautéing for 1–2 minutes until fragrant. Increase the heat to medium-high and add the mushrooms.
  3.  Cook for 3–4 minutes until they release their moisture and start to brown. Add the broccoli florets and stir-fry for 3–4 minutes. Stir in the red cabbage and sliced peppers, cooking for another 3–4 minutes until all the vegetables are tender-crisp. 
  4. Reduce the heat to medium and add the cooked noodles and seasoning sachets to the skillet.  Drizzle with soy sauce and sweet chili sauce, tossing everything together until evenly coated and heated through. 
  5. Transfer the stir-fry to plates or bowls and garnish with chopped spring onions and sesame seeds.
