Butter Bean and Rice Skillet

A quick, easy and wholesome meal with KOO!

Cooking Time: 20 minutes
Serves: 4

Ingredients:

  • 1 red onion, finely chopped
  • 1 red pepper, chopped
  • 2 cloves garlic, minced
  • 1 tsp paprika
  • 1 tsp oregano
  • 1/2 tsp ground cumin
  • 2 cups cooked rice
  • 1 can KOO butter beans, rinsed & drained
  • 2 tomatoes, concasse
  • Season to taste
  • Garnish
  • Crumbled feta
  • Fresh coriander
  • Lime slices
  • Sliced jalapeños

How To Make Butter Bean Rice Skillet

  1. Heat skillet, add oil.
  2. Add onions & peppers, cook till soft.
  3. Add spices & garlic, cook till fragrant.
  4. Add rice, tomatoes & black beans.
  5. Cook for roughly 5 minutes.
  6. Season to taste with salt & pepper.
  7. Garnish with feta, fresh coriander leaves and sliced jalapeños
