Buttermilk Pancake Stack with Fresh Berries and Vanilla Ice Cream with Choc Sauce

Ingredients:

Pancakes

  • 76g self-raising flour
  • 34g cake flour
  • 47g sugar
  • 3tsp baking powder
  • 1/4tsp salt
  • 3/4 cup buttermilk
  • 1/2 cup yoghurt
  • 2 eggs
  • 2Tbsp melted butter

To serve:

  • Fresh Berry
  • Berry Coulis
  • 2L Country Fresh Vanilla Flavoured Ice Cream with Cho Sauce

How To Make Buttermilk Pancake Stack with Fresh Berries and Vanilla Ice Cream with Choc Sauce 

  1. Sift the dry ingredients together.
  2. Using the hand blender, blend the buttermilk, yoghurt, eggs and melted butter together.
  3. Add the wet ingredients to the dry and mix by hand till there are no visible white bits.
  4. Avoid over mixing.
  5. Place a pan on medium heat and brush with butter.
  6. Ladle a 1/4 cup measure of batter into the pan and flip only when the top is covered with air bubbles.
  7. Remove from heat once golden.
  8. Repeat until the batter is finished
  9. Create a stack of 6 pancakes.
  10. Top with fresh berries and the berry coulis
    Finish off with a generous scoop of smooth and creamy Country Fresh Vanilla Flavoured Ice Cream with Choc Sauce.
