Ingredients:
For the Salad:
- 1 large head of Romaine lettuce (washed and chopped)
- 1 cup croutons (store-bought or homemade)
- ¼ cup Parmesan cheese, grated
For the Homemade Caesar Dressing:
- ½ cup mayonnaise or Greek yoghurt
- 2 Tbsp Dijon mustard
- 2 Tbsp lemon juice
- 2 tsp anchovy paste or 4-5 anchovy fillets, minced
- 1 garlic clove, minced
- ½ cup extra virgin olive oil
- Salt & pepper
- ¼ cup Parmesan cheese, grated
How To Make Caesar Salad with Caesar Salad Dressing
For the Dressing:
- In a medium bowl, whisk together mayonnaise, Dijon mustard, lemon juice, anchovy paste, minced garlic, salt, and black pepper.
- Slowly drizzle in the olive oil while whisking constantly to emulsify the dressing.
- Stir in the Parmesan cheese and mix until smooth and well-combined.
- Taste and adjust seasoning as needed, adding more salt, pepper, or lemon juice to your preference.
- Cover and refrigerate the dressing for at least 30 minutes.
For the Salad:
- In a large salad bowl, add the chopped Romaine lettuce.
- Drizzle the homemade Caesar dressing over the lettuce, tossing gently to coat evenly.
- Sprinkle the croutons and grated Parmesan cheese over the top.
