Caramel Poked Brownies

Ingredients:

  • 1 cup cake flour
  • 1 cup cocoa powder
  • 2 cups brown sugar
  • ½ tsp salt
  • 342g butter (melted)
  • 6 eggs
  • For topping
  • 1 tin caramel
  • 2 slabs (100g each) dark chocolate, melted
  • ½ cup almonds, chopped

How To Make Caramel Poked Brownies

  1. Preheat oven to 190°C. Sift together the cake flour & cocoa powder in a large bowl.
  2. Add brown sugar and salt, then mix well.
  3. Whisk in the butter and eggs until just combined, then add chocolate chips.
  4. Pour the brownie batter into a prepared baking dish, smooth it out and bake for 35 minutes or until a skewer inserted in the centre comes out clean.
  5. For the topping: Beat the caramel treat until smooth, then use the back of a wooden spoon to poke holes into the brownie and pour over the caramel treat, allow it to set.
  6. Pour the melted chocolate over the set caramel layer and sprinkle over chopped almonds and allow to set for about 15 – 20 minutes before slicing.
