Caramel Poked Brownies

Ingredients:
- 1 cup cake flour
- 1 cup cocoa powder
- 2 cups brown sugar
- ½ tsp salt
- 342g butter (melted)
- 6 eggs
- For topping
- 1 tin caramel
- 2 slabs (100g each) dark chocolate, melted
- ½ cup almonds, chopped
How To Make Caramel Poked Brownies
- Preheat oven to 190°C. Sift together the cake flour & cocoa powder in a large bowl.
- Add brown sugar and salt, then mix well.
- Whisk in the butter and eggs until just combined, then add chocolate chips.
- Pour the brownie batter into a prepared baking dish, smooth it out and bake for 35 minutes or until a skewer inserted in the centre comes out clean.
- For the topping: Beat the caramel treat until smooth, then use the back of a wooden spoon to poke holes into the brownie and pour over the caramel treat, allow it to set.
- Pour the melted chocolate over the set caramel layer and sprinkle over chopped almonds and allow to set for about 15 – 20 minutes before slicing.
