Carrot & Ginger Soup
A soup that’s both tasty and good for your gut!
Ingredients:
- 6 large carrots, peeled & chopped
- 1 Tbsp olive or coconut oil
- 1 large onion, chopped
- 2 cloves garlic, grated
- 2 Tbsp fresh ginger, grated
- 4 cups organic vegetable stock
- ½ tsp ground turmeric
- Salt & pepper
- Juice of 1 lemon or lime
- ¼ cups coconut milk
To serve:
- Lime slices
- Fresh parsley
How To Make Carrot & Ginger Soup
- In a large pot, heat oil over medium heat.
- Add in onions and sauté for a few minutes until softened.
- Add in the garlic and ginger and cook for another 2 minutes.
- Add in carrots and cook for about 5 minutes, then add in turmeric, seasoning and stock.
- Bring to a boil then reduce the heat and allow to simmer for 30 – 40 minutes until the carrots are tender.
- Then remove from the heat and use a stick blender to blend until smooth, stir in coconut milk and lemon juice.
- Season to taste if necessary.
- Serve immediately and garnish with lime slices and fresh parsley.
