Carrot & Ginger Soup

A soup that’s both tasty and good for your gut!

 

Ingredients:

  • 6 large carrots, peeled & chopped
  • 1 Tbsp olive or coconut oil
  • 1 large onion, chopped
  • 2 cloves garlic, grated
  • 2 Tbsp fresh ginger, grated
  • 4 cups organic vegetable stock
  • ½ tsp ground turmeric
  • Salt & pepper
  • Juice of 1 lemon or lime
  • ¼ cups coconut milk

To serve:

  • Lime slices
  • Fresh parsley

How To Make Carrot & Ginger Soup

  1. In a large pot, heat oil over medium heat.
  2. Add in onions and sauté for a few minutes until softened.
  3. Add in the garlic and ginger and cook for another 2 minutes.
  4. Add in carrots and cook for about 5 minutes, then add in turmeric, seasoning and stock.
  5. Bring to a boil then reduce the heat and allow to simmer for 30 – 40 minutes until the carrots are tender.
  6. Then remove from the heat and use a stick blender to blend until smooth, stir in coconut milk and lemon juice.
  7. Season to taste if necessary.
  8. Serve immediately and garnish with lime slices and fresh parsley.
