Chargrilled Sumac Spiced Seasonal Veg Platter

Vibrant, full of  flavour and perfect for summer!

Ingredients:

 

  • 2 large red and orange color bell peppers, seeded and cut into thick strips
  • 1 red onion, sliced into 1 cm thick rounds
  • 1 punnet asparagus, trimmed
  • 1 yellow squash, sliced diagonally 1cmthick
  • 1 large zucchini, sliced diagonally 1cmthick
  • 2 Tbsp extra virgin olive oil
  • 2 Tbsp lemon juice
  • 1 tsp dried Zaatar seasoning
  • 2 tsp sumac
  • salt and pepper to taste.
  • 1 Tbsp sesame seeds

to serve

  • mint
  • Dips of your choosing (hummus, red pepper hummus, yogurt, and mint dip etc.)

How To Make Veg Platter

  1. Heat the grill or grill pan over medium-high heat. 
  2. Toss the vegetables together in a bowl with the rest of the ingredients. 
  3. Add a drizzle of olive oil and season to taste. 
  4. Grill the vegetables turning occasionally, until lightly charred, about 6 to 10 minutes. 
  5. Arrange on a platter with dips of your choice and garnish with fresh mint
