
Chargrilled Sumac Spiced Seasonal Veg Platter
Vibrant, full of flavour and perfect for summer!

Ingredients:
- 2 large red and orange color bell peppers, seeded and cut into thick strips
- 1 red onion, sliced into 1 cm thick rounds
- 1 punnet asparagus, trimmed
- 1 yellow squash, sliced diagonally 1cmthick
- 1 large zucchini, sliced diagonally 1cmthick
- 2 Tbsp extra virgin olive oil
- 2 Tbsp lemon juice
- 1 tsp dried Zaatar seasoning
- 2 tsp sumac
- salt and pepper to taste.
- 1 Tbsp sesame seeds
to serve
- mint
- Dips of your choosing (hummus, red pepper hummus, yogurt, and mint dip etc.)
How To Make Veg Platter
- Heat the grill or grill pan over medium-high heat.
- Toss the vegetables together in a bowl with the rest of the ingredients.
- Add a drizzle of olive oil and season to taste.
- Grill the vegetables turning occasionally, until lightly charred, about 6 to 10 minutes.
- Arrange on a platter with dips of your choice and garnish with fresh mint
