Cheese and Peppercorn Sauces

Pasta, chicken, steak or veggies, a classic cheese sauce or peppercorn sauce is the perfect accompaniment!

Serves: 4-6


  • For cheese sauce:
  • 2 tbsp butter
  • 2 tbsp Golden Cloud Cake flour
  • 2 cups milk
  • 1 cup grated cheddar cheese
  • Salt and pepper

How To Make Cheese Sauce

  1. In saucepan melt butter over medium heat
  2. Add the flour and whisk to combine
  3. Cook until the mixture lightly browned then whisk in the milk until smooth.
  4. Cook until sauce is thickened.
  5. Remove from the heat, add the cheese and season to taste.
  6. To serve: Fold into cooked macaroni, top with extra cheese and bake till golden OR pour over roasted vegetables


  • For peppercorn sauce:
  • 3 tbsp butter
  • 2 shallots, finely chopped
  • 2 garlic cloves, finely chopped
  • 2 tbsp cracked black pepper
  • 1 tbsp Golden Cloud Cake Flour
  • 2 sprigs fresh thyme
  • 2 cups cream

How To Make Peppercorn Sauce

  1. Melt the butter in a pan on medium heat.
  2. Add the shallots, garlic and thyme, and sauté until soft.
  3. Add the peppercorn and flour and toast until fragrant
  4. Pour in the cream, season with salt and allow to simmer for 10-15 minutes or until thickened
  5. Pour the sauce over the chicken schnitzel and enjoy!
