Preheat oven to 180°. Grease a baking tray and place sliced bread onto the baking tray.
In a medium bowl mix together olive oil, parmesan cheese, parsley, chili flakes and seasoning until well combined then drizzle over the bread and toss until completed coated in the mixture
Place into the oven and bake for 10 minutes, then halfway through scatter over the grated cheddar cheese and bake further for another 10 minutes until crispy and golden brown.
Serve immediately with any soup of your choice and enjoy.
