Cheesy Chicken Mayo Sandwich

Ingredients:
- 4 slices Sunbake
- Sourdough
- 4 tbsp butter
- 1 ½ cup shredded
- rotisserie chicken
- ¾ cup mayonnaise
- 1 small onion, finely chopped
- 1 green chilli, finely chopped
- 1 tbsp fresh parsley, chopped
- 4 slices Emmental cheese
- Salt
- Pepper
To serve:
- Fries/ potato wedges (optional)
- Dipping sauce of choice (optional)
How To Make Cheesy Chicken Mayo Sandwich
- In a medium bowl, combine the shredded chicken, mayo, onion, chilli, parsley and season to taste.
- Butter each slice of bread on one side.
- Heat a large skillet or grill pan and place two slices of bread butter side down on the skillet.
- Add a slice of cheese on each slice, followed by 2-3 spoonfuls of the chicken mixture.
- Top with another slice of cheese and close with the remaining bread slices, butter side up.
- Toast on both sides until the cheese has melted and bread is golden and crisp.
- Pressing down the sandwich as it toasts.
- Serve with fries and a dipping sauce.
