Cheesy Mushroom Pap Bake

A winning recipe that’s impossible to resist!

Serves: 8-12
Time: 45 minutes


  • 6 cups water
  • 2 tsp salt
  • 500g maize meal
  • 1 cup corn kernels
  • 4 tbsp Clover Springbok Unsalted
  • Butter
  • 2 tbsp Clover Olive Pride
  • 250g bacon, diced
  • 250g mushrooms, sliced
  • 1 tbsp dried mixed herbs
  • 1 tsp garlic powder
  • Salt and pepper
  • 2 cups grated Clover Cheddar Cheese
  • Handful fresh parsley, chopped (optional)

How To Make:

  1. To make the pap, heat the water and stock in a large pot then whisk in the maize meal.
  2. Add salt and allow to come to a simmer then turn down the heat and cover the pot.
  3. Allow to cook very gently for 10-15 minutes until all the liquid has been absorbed.
  4. Stir in corn kernels and butter and allow to cook for a further 10 minutes.
  5. Stir through half the cheese.
  6. Pour the cooked pap into a lined, greased baking tray.
  7. Set aside and preheat the oven to 180C
  8. Heat the olive oil in a pan and add the bacon, cook until the bacon starts to brown then add the mushrooms, mixed herbs and garlic.
  9. Cook until browned and slightly crisp. Season to taste
  10. Spoon the mushroom mixture over the pap and spread, scatter over the grated cheese.
  11. Place in the oven and bake until the cheese has melted.
  12. Remove from the oven, top with fresh parsley and serve immediately

Chefs Tip: For the pap you want to achieve a soft and spreadable consistency, so feel free to add more water during the cooking process if your pap looks a bit stiff
