
Cheesy Mushroom Pap Bake
A winning recipe that’s impossible to resist!

Serves: 8-12
Time: 45 minutes
Ingredients:
- 6 cups water
- 2 tsp salt
- 500g maize meal
- 1 cup corn kernels
- 4 tbsp Clover Springbok Unsalted
- Butter
- 2 tbsp Clover Olive Pride
- 250g bacon, diced
- 250g mushrooms, sliced
- 1 tbsp dried mixed herbs
- 1 tsp garlic powder
- Salt and pepper
- 2 cups grated Clover Cheddar Cheese
- Handful fresh parsley, chopped (optional)
How To Make:
- To make the pap, heat the water and stock in a large pot then whisk in the maize meal.
- Add salt and allow to come to a simmer then turn down the heat and cover the pot.
- Allow to cook very gently for 10-15 minutes until all the liquid has been absorbed.
- Stir in corn kernels and butter and allow to cook for a further 10 minutes.
- Stir through half the cheese.
- Pour the cooked pap into a lined, greased baking tray.
- Set aside and preheat the oven to 180C
- Heat the olive oil in a pan and add the bacon, cook until the bacon starts to brown then add the mushrooms, mixed herbs and garlic.
- Cook until browned and slightly crisp. Season to taste
- Spoon the mushroom mixture over the pap and spread, scatter over the grated cheese.
- Place in the oven and bake until the cheese has melted.
- Remove from the oven, top with fresh parsley and serve immediately
Chefs Tip: For the pap you want to achieve a soft and spreadable consistency, so feel free to add more water during the cooking process if your pap looks a bit stiff
