Cheesy Spinach & Feta Bagel Melts

- 2 bagels, halved (try everything or whole wheat)
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 3 cups fresh spinach
- ¼ teaspoon salt
- ¼ teaspoon black pepper
- ½ teaspoon crushed red pepper flakes (optional)
- ½ cup crumbled feta cheese
- ½ cup shredded mozzarella or cheddar cheese
- 2 tablespoons cream cheese (optional, for extra creaminess

How To Make Cheesy Spinach & Feta Bagel Melts
- Preheat oven to 200°C.
- Line a baking sheet with parchment paper or foil.
- In a skillet, heat olive oil over medium heat.
- Add garlic and sauté for 30 seconds until fragrant.
- Add spinach and cook until wilted (about 2-3 minutes for fresh; 1 minute for thawed frozen).
- Season with salt, pepper, and red pepper flakes if using.
- Remove from heat.
- Lightly toast the bagel halves in a toaster or under the broiler for 2-3 minutes until slightly crisp.
- Spread a thin layer of cream cheese (if using) on each bagel half.
- Divide the spinach mixture evenly among the bagels.
- Top with crumbled feta and then shredded mozzarella or cheddar.
- Place the bagels on the baking sheet and bake for 8–10 minutes, or until the cheese is
bubbly and golden. - Serve warm, top with poached or fried egg and garnish with fresh herbs.
