Chicken Bunny Chow

A favourite South African dish for the one and only PJ Powers!

Serves: 2

Ingredients

  • 1 whole unsliced loaf of bread
  • 2 chicken fillets, cubed
  • 2 small potatoes, cubed
  • ½ Cup Plain yoghurt
  • 1 tin tomato puree
  • 1 onion, finely chopped
  • 2 tablespoon oil
  • 2 tablespoon Tandoori curry paste
  • Salt and pepper, to taste

How To Make:

  1. Pour the yoghurt into a mixing bowl and add the chicken. Allow to marinate for 1 hour.
  2. Add the oil and onion to a medium heated saucepan and allow to cook for 3 – 4 minutes until golden in colour.
  3. Add the curry paste, tinned tomato, potatoes and chicken and allow to cook for 35-40 minutes, until thickened.
  4. Cut the loaf in half and gently pull out the filling of the bread to form a hole for the curry filling.
  5. Fill each half loaf with the curry filling and top with bread from inside of the loaf you removed and serve.
