Chicken Loaded Mash Potato Bowls
This chicken loaded mash potato bowls look like peak comfort food.

Ingredients:
- For the BBQ pulled chicken:
- 250g pulled chicken breast
- 1 tsp smoked paprika
- 1 tsp garlic granules
- 1 red onion diced
- 1 tsp chopped garlic
- 200ml chicken stock
- 60g BBQ sauce
- 1 tsp Worcestershire sauce
- For the mash:
- 500g potatoes, peeled & chopped
- 15g butter
- 80ml milk
- Salt & pepper, to taste
- For the toppings:
- 2 streaky bacon rashers, chopped
- 35g cheddar cheese grated
- 15g mozzarella cheese, grated
- Fresh parsley, chopped
How To Make Chicken Loaded Mash Potato Bowls
- Season the chicken with smoked paprika, garlic granules, salt and pepper. Heat a pan over medium heat and add the chicken. Pan fry for 4 – 5 minutes on each side until browned and almost cooked through.
- Add the diced onion and chopped garlic, cook until softened. Pour in the chicken stock, BBQ sauce & Worcestershire sauce. Simmer for 5 minutes, then remove the chicken and shred with two forks.
- Return the chicken to the pan and cook for a few minutes until the sauce is thickened. Meanwhile add the potatoes to a large pot of salted boiling water. Cook until fork tender. Drain, then mash with butter, milk and seasoning.
- Cook the bacon in a separate pan until it is crispy. Divide the mash between two bowls and spoon over the BBQ pulled chicken. Scatter over the cheese, then place the bowls under a hot grill for 1 – 2 minutes.
- Top with crispy bacon and a sprinkle of fresh parsley before serving.
