Chicken Loaded Mash Potato Bowls

This chicken loaded mash potato bowls look like peak comfort food.

Ingredients:

  • For the BBQ pulled chicken:
  • 250g pulled chicken breast
  • 1 tsp smoked paprika
  • 1 tsp garlic granules
  • 1 red onion diced
  • 1 tsp chopped garlic
  • 200ml chicken stock
  • 60g BBQ sauce
  • 1 tsp Worcestershire sauce
  • For the mash:
  • 500g potatoes, peeled & chopped
  • 15g butter
  • 80ml milk
  • Salt & pepper, to taste
  • For the toppings:
  • 2 streaky bacon rashers, chopped
  • 35g cheddar cheese grated
  • 15g mozzarella cheese, grated
  • Fresh parsley, chopped

How To Make Chicken Loaded Mash Potato Bowls 

  1. Season the chicken with smoked paprika, garlic granules, salt and pepper. Heat a pan over medium heat and add the chicken. Pan fry for 4 – 5 minutes on each side until browned and almost cooked through.
  2. Add the diced onion and chopped garlic, cook until softened. Pour in the chicken stock, BBQ sauce & Worcestershire sauce. Simmer for 5 minutes, then remove the chicken and shred with two forks.
  3. Return the chicken to the pan and cook for a few minutes until the sauce is thickened. Meanwhile add the potatoes to a large pot of salted boiling water. Cook until fork tender. Drain, then mash with butter, milk and seasoning.
  4. Cook the bacon in a separate pan until it is crispy. Divide the mash between two bowls and spoon over the BBQ pulled chicken. Scatter over the cheese, then place the bowls under a hot grill for 1 – 2 minutes.
  5. Top with crispy bacon and a sprinkle of fresh parsley before serving.
