
Chocolate Weet-Bix Muffins

Ingredients:
- 3 Bokomo Cocoa
- Weet-Bix biscuits, crushed
- 1 cup all-purpose flour
- ½ cup cocoa powder
- 1 tsp baking powder
- ½ tsp baking soda
- ½ cup brown sugar
- 1 egg
- ¾ cup milk of choice
- ¼ cup vegetable oil or melted butter
- 1 tsp vanilla extract
- ½ cup chocolate chips (optional)
How To Make Chocolate Weet-Bix Muffins
- Preheat the oven to 180°C and line a muffin tray with paper liners.
- In a large bowl, whisk together the flour, cocoa powder, baking powder, baking soda, sugar, and crushed Weet-Bix.
- In a separate bowl, whisk the egg, milk, oil, and vanilla extract until combined.
- Gradually add the wet ingredients to the dry ingredients, stirring until just combined.
- Fold in the chocolate chips if using.
- Spoon the batter into the muffin tray, filling each cup about ¾ full.
- Bake for 18-20 minutes or until a toothpick inserted in the centre comes out clean.
- Allow to cool before enjoying!
