Chocolate Weet-Bix Muffins

Ingredients:

  • 3 Bokomo Cocoa
  • Weet-Bix biscuits, crushed
  • 1 cup all-purpose flour
  • ½ cup cocoa powder
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ cup brown sugar
  • 1 egg
  • ¾ cup milk of choice
  • ¼ cup vegetable oil or melted butter
  • 1 tsp vanilla extract
  • ½ cup chocolate chips (optional)

How To Make Chocolate Weet-Bix Muffins

  1. Preheat the oven to 180°C and line a muffin tray with paper liners.
  2. In a large bowl, whisk together the flour, cocoa powder, baking powder, baking soda, sugar, and crushed Weet-Bix.
  3. In a separate bowl, whisk the egg, milk, oil, and vanilla extract until combined.
  4. Gradually add the wet ingredients to the dry ingredients, stirring until just combined.
  5. Fold in the chocolate chips if using.
  6. Spoon the batter into the muffin tray, filling each cup about ¾ full.
  7. Bake for 18-20 minutes or until a toothpick inserted in the centre comes out clean.
  8. Allow to cool before enjoying!
