Citrus Bundt Cake
Bursting with citrusy goodness, this cake is flawless thanks to Royal Baking Powder!

Serves: 8-10
Time: 1 hour
Ingredients:
- 3 cups cake flour
- 1 tsp salt
- 1 tsp Royal Baking Powder
- ½ tsp baking soda
- 2 tsp mixed spice
- 225g butter
- 1 ½ cup sugar
- 4 eggs
- 1 tsp vanilla essence
- Zest of 2 oranges
- ½ cup freshly squeezed orange juice
- ½ cup amasi
- For the glaze:
- 1 ¼ cup icing sugar
- 2-3 tbsp water
- ½ teaspoon vanilla essence
- To decorate;
- Candied orange slices
- Icing sugar, to dust (optional)
How To Make
- Preheat the oven to 180C and prepare a bundt baking tin with baking spray or butter.
- Sieve the flour, salt, baking powder, baking soda and mixed spice into a large bowl. Set aside
- In a separate large bowl, beat the butter using an electric whisk until smooth and creamy, about a minute.
- Add the sugar and cream together until light and fluffy. Scraping down the sides of the bowl as needed.
- Beat in the orange zest and juice.
- Add the dry ingredients and buttermilk gradually, alternating between the two. Careful not to overmix
- Pour the batter into the baking tin and bake for 40-50 minutes or until a skewer inserted comes out clean.
- Remove from the pan and allow to cool in the tin.
- In the meantime, make the glaze by whisking all the ingredients together.
- Add more liquid depending on your preferred consistency.
- Turn the cake onto a place or cake stand. Drizzle over the glaze and finish off with candied or fresh citrus.
