
Clover Authentikos Savoury Roulade
A great low carb and gluten free dish is perfect for a summer night dinner and even better when it takes only a few minutes to prepare.

Ingredients:
3 large zucchini, grated
3 large eggs
1 cup grated cheese
2 tbsp freshly chopped chives
2 tbsp Clover Authentikos double cream yoghurt, plain
1 tbs chilli flakes
1 tbsp garlic powder
Salt and pepper to taste
For the filling
Clover Authentikos double cream yoghurt
1 cup baby spinach
½ cup pesto
Smoked salmon/trout strips/ham/vegan/vegetarian alternatives
Method:
Preheat the oven to 180C.
Squeeze out any excess water from the grated zucchini, using a tea towel.
Place the zucchini into a bowl along with the eggs, cheese, chives, Clover Authentikos, and seasoning. Whisk to combine and pour onto a greased and lined baking sheet. Spread out to the edges and bake in the oven for 10-15 minutes, or until golden brown.
Once slightly cooled, spread the Authentikos on one end of the roulade. Top with pesto, salmon/trout/ham or any topping of your choice and spinach. Roll up into a log and cut or slice as desired.
Chefs Tip: Ensure the roulade is not too hot when adding the filling.
