3 chicken breasts, sliced into strips 3 bell peppers (red, yellow, green), sliced 1 red onion, sliced Juice and zest of 1 lime 1 tbsp chilli powder 1 tbsp ground cumin 1 tbsp paprika 1 tsp dried oregano 1 tbsp garlic powder Salt and pepper to taste Mini tortillas for serving Pickled jalapenos, sliced 1 avo, sliced Handful fresh coriander Authentikos yoghurt, plain flavour
Method:
Place the chicken breasts, red onion and sliced peppers into a mixing bowl. Mix together the juice and zest of lime, spices, salt and pepper and sprinkle over the chicken and peppers. Toss to coat and place onto a greased baking sheet. Drizzle over some olive oil and grill for 20-25 minutes, or until the chicken is cooked through.
Serve with mini tortilla, avo, pickled jalapeno and a generous serving of Clover Authentikos yoghurt. Garnish with fresh coriander.
