Clover Bliss Deep Fried Froyo Pancakes

 Pancakes are on the menu but not just any kind – its the deep fried kind that are crispy on the outside and indulgent on the inside.

Ingredients:

500g Bliss double cream yoghurt, Strawberry and cream flavour
½ cup desiccated coconut, toasted

Sugar syrup:
¾ cup sugar
½ cup water
¼ cup honey
1 tsp lemon zest

Batter:
1 cup flour
1 tbsp sugar
1 tsp instant yeast
½ tsp baking powder
Pinch of salt
1 cup warm water
½ tsp ground cardamom

Oil for frying 

 

 

Method:

Line a square dish or tin with parchment paper on the bottom and sides. Pour in the Bliss yoghurt into the tin and freeze until frozen. Make the batter by mixing all the ingredients in a blender until smooth, and leave to rest for 15 minutes. In the meantime, make the sugar syrup by combining all the ingredients in a saucepan and bringing to a boil, remove from the heat and set aside. Heat a non-stick pan and drizzle a tablespoom of oil, pour a quarter cup of batter into the pan a cook until golden on one side, do not flip. Repeat the process until the batter is finished. Heat the oil in a pot for deep frying. Remove the frozen yogurt from the freezer and cut into 2cm x 2cm blocks. Place a block on one pancake and fold over the pancake to seal in the frozen yogurt. Pinch the edges and deep fry until golden. When the pancakes come out the fryer, drizzle over the sugar syrup and dip half the filled pancake into the desiccated coconut. Serve warm
